Dove
Make sure to get all the shot out of your birds before cooking. Run a toothpick through
wound channels to clear out pellets.
There are a lot of ways to prepare dove, but these two are at the top of my list.
Outdoor cooking
Remove breastbone and place sliced jalapenos between the breast halves. Wrap dove
with a strip of bacon and secure with a toothpick. Place dove on the grill and cook until
the bacon is well done.
Serve with green onion, blackeyed peas and cole slaw.
Indoor cooking
Preheat oven to 350 degrees. Dredge dove breast in seasoned flour. Sautee in a cast
iron skillet with butter (2 tablespoons of butter per breast) for 15 minutes, then put
birds in a casserole dish.
Add wine to the butter and heat thoroughly. Pour liquid mixture over the dove and
bake loosely covered for 20 minutes. Uncover and bake another 15 minutes.
Serve with stir-fried fresh vegetables, raw carrot sticks and bell pepper slices, and rice.
